Thai inspired Turkey Burgers with Caramelized Onions

Last night, I made some dang tasty turkey burgers. I looked for several recipes for a turkey burger and decided to try my own recipe. I got some ideas from recipes but thought to invent my own. They came out amazing. In the past I have had dry and not so flavorful turkey burgers. This one was opposite of that. It was packed with flavors and perfectly moist and cooked to perfection.
Here is the recipe.

1 pound of ground turkey
1 large scallion
1 small red pepper, seeded and cut into chunks
2 Tablespoons of fresh basil or cilantro, I used basil because that's what I had in the house
2 Tablespoons of low sodium soy sauce
1 Teaspoon fresh ginger, I used about an inch thick piece and grated it. (tip, freeze your ginger, it's easier to grate)
1 1/2 tablespoon of fish sauce
1 Tablespoon or more of sriracha
4 scallions sliced
Sea salt to taste

Directions:
Put all ingredients except for ground turkey and scallions in a food processor process until combined.
Pour ingredients on top of ground turkey and add scallions. Mix together and form patties. I made 4 ounce patties.

Grill burgers on stove top grill or outdoor grill until done.

I used whole wheat deli slims for the bun and topped with onions.

Caramelized Onion Recipe:
2 Large Onions
1 Tablespoon of oil (I used coconut but you can use Olive Oil or any oils you have.
1/2 Tablespoon of butter
Sea Salt and Pepper

Slice onions, saute in oil, butter and s&p until tender and translucent. It takes about an hour.

I know the picture quality is terrible but at least its a picture.

Chicken Croquettes with Creole Sauce

Chicken Croquettes with Creole Sauce
Adapted from Cajunlicious/Paula Deen

Ingredients:

Canola Oil

1/3 cup minced red bell pepper

1/3 cup minced celery

1/3 cup minced onion

2 cups finely cooked chicken

1 cup panko breadcrumbs

1/4 cup light mayonnaise

1/4 cup fat free sour cream

1 large egg and 1 large egg white lightly beaten

1 Tbsp Dijon mustard

1/2 Tbsp Worcestershire sauce

1 tsp sea salt

Creole Sauce:

1 clove garlic, minced

1/3 cup light mayonnaise

1/3 cup light sour cream

1 Tbsp. Dijon mustard

1 Tbsp. fresh lemon juice

1 tsp. Creole seasoning

For the sauce: In a small bowl, combine all the ingredients. Cover and chill.

Pre-Heat oven to 425

In a skillet, add 1 Tbsp of canola oil over medium heat. Add the red bell pepper, celery, and onions and cook until tender, about 5 minutes.

In a large bowl, combine the chicken, panko, and red bell pepper mixture. Set aside.

In a small bowl, combine the mayonnaise, sour cream, eggs, mustard, Worcestershire sauce, and salt. Add to the chicken mixture, tossing gently to combine. Form the mixture into patties. I used an ice cream scoop and combined 2 scoops to form the patty. Spray sheet pan with Canola Oil spray and place patties on baking pan then lightly spray patties with the spray, bake for 5 minutes then flip the patties and bake for another 5 minutes.

Serve with Creole Sauce and enjoy!
